BLACK BARN wine making philosophy
We, BLACK BARN, are committed to one wine ~ a big dry red wine crafted with Merlot, Cabernet Sauvignon, and Cabernet Franc grapes brought fresh to us from the Sierra Foothills of California. We believe in aging our wines over two years in oak barrels, stainless steel vats, and finally in bottles, before we present our passion to our appreciative customers for their enjoyment. We are dedicated to crafting only the finest big dry red wine –we are BLACK BARN.
At BLACK BARN Winery, we concentrate on crafting one wine - a blended full bodied wine made with grapes brought fresh from California.
The crushing de-stemming process takes place immediately upon arrival of the grapes. Blending of the wine from the three varieties - Merlot,Cabernet Sauvignon and Cabernet Franc - does not occur until after the wines are allowed to age separately.
Our wine is aged at least two years - first, in Minnesota “medium+toast” oak barrels, purchased from Kelvin Cooperage in Louisville, Kentucky. We remove the wine from the oak barrels when just the right amount of oak aging has been achieved, and place it in stainless steel vats from Italy to complete the aging process.
Finally, BLACK BARN wine is bottled and sealed with Portuguese corks, then capped with tin capsules to ensure longevity.
Many years ago a long-time friend of my family, Count Raban Adelmann, afforded me the opportunity of a lifetime. He arranged for me to live and work, for one year, at St. Emilion, France’s Chateaux Canon La Gaffeliere which is owned by his friend, Count Neipperg.
It was an experience that began with 6-1/2 day work weeks during the harvest, and continued through the wine’s fermentation, barrel aging, racking, bottling, corking, capsuling, and all other aspects of cellar management.
I am forever grateful for this once in a lifetime experience, as it allowed me to take part in the creation of one of the world’s finest red wines. It is in the spirit of this wine that I craft BLACK BARN.
